{"id":20833,"date":"2021-09-27T11:13:23","date_gmt":"2021-09-27T09:13:23","guid":{"rendered":"https:\/\/todayslegacy.wordpress.com\/2021\/09\/27\/cooking-adventures\/"},"modified":"2021-09-27T11:13:23","modified_gmt":"2021-09-27T09:13:23","slug":"cooking-adventures","status":"publish","type":"post","link":"https:\/\/todayslegacy.net\/index.php\/2021\/09\/27\/cooking-adventures\/","title":{"rendered":"Cooking Adventures"},"content":{"rendered":"\n<p>One Sabbath we decided to embark on a new cooking adventure as a family: homemade bagels and cream cheese. <\/p>\n\n\n\n<p>Since the store hasn\u2019t carried cream cheese in over a month, I set to scouring the internet for a <em><span style=\"text-decoration:underline;\">realistic<\/span><\/em> cream cheese recipe based on our Mozambican ingredients. <\/p>\n\n\n\n<p>The older three girls began making bagels while I researched. They\u2019ve grown accustomed to making batter from scratch and felt confident in their ability to prep the bagels in boiling water like we do when we make homemade soft pretzels. <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/todayslegacy.files.wordpress.com\/2021\/09\/img_9321.jpg?w=768\" alt=\"\" class=\"wp-image-20828\" \/><\/figure>\n\n\n\n<p>Then while the bagels baked, Rachael, Abi and I went to the store to buy heavy cream and UHT shelf whole milk (that\u2019s the best shot at milk that we have here). <\/p>\n\n\n\n<p>Upon our return, we brought the milk and heavy cream to a boil and added lemon juice to separate the curds and whey. <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/todayslegacy.files.wordpress.com\/2021\/09\/img_9309.jpg?w=768\" alt=\"\" class=\"wp-image-20823\" \/><\/figure>\n\n\n\n<p>We used a handkerchief as a cheese cloth and squeezed out the excess whey, while pouring cold water over the curds.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/todayslegacy.files.wordpress.com\/2021\/09\/img_9310.jpg?w=768\" alt=\"\" class=\"wp-image-20824\" \/><\/figure>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/todayslegacy.files.wordpress.com\/2021\/09\/img_9311.jpg?w=768\" alt=\"\" class=\"wp-image-20825\" \/><\/figure>\n\n\n\n<p>On the side, we also heated up some frozen strawberries (our \u201cworth it\u201d big buy once a month) and mashed them as a mix-in to part of the cream cheese. We mixed it to taste at the table, leaving it a tiny bit watery (we just had to fit in all the strawberries we cooked), but full of flavor. <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/todayslegacy.files.wordpress.com\/2021\/09\/img_9319.jpg?w=768\" alt=\"\" class=\"wp-image-20827\" \/><\/figure>\n\n\n\n<p>To the \u201chand mixer thing\u201d we went for the final stage of whipping air into the cream cheese with an added dash of salt. I also put in a dash of sugar for the littles\u2019 enjoyment. \ud83d\ude09<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/todayslegacy.files.wordpress.com\/2021\/09\/img_9312.jpg?w=768\" alt=\"\" class=\"wp-image-20822\" \/><\/figure>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/todayslegacy.files.wordpress.com\/2021\/09\/img_9313.jpg?w=768\" alt=\"\" class=\"wp-image-20829\" \/><\/figure>\n\n\n\n<p>We took turns mixing the thick cream cheese, adding back in a bit of the whey (oops, we were too efficient) to make a creamier cheese spread and to give our biceps a bit of a break. Ha!<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/todayslegacy.files.wordpress.com\/2021\/09\/img_9315.jpg?w=768\" alt=\"\" class=\"wp-image-20830\" \/><\/figure>\n\n\n\n<p>Breakfast was served some two hours later (with the store trip in there).
